Special Bombay Biriyani

Ingredience

  • Chicken / Meat on Bones: 1kg / 2.2lbs, small portions
  • Basmati Rice: 4 cups / 750g, washed & soaked
  • Onions: 4-5 medium / 300g, finely sliced
  • Tomatoes: 4-5 medium / 300g, diced
  • Potatoes: 3-4 medium / 250g, peeled & quartered
  • Garlic Paste: 2 tablespoons
  • Ginger Paste: 2 tablespoons
  • Plain Yoghurt: 1 cup / 200g, whipped
  • Cooking Oil: 1 cup / 175ml
  • Malhar Special Bombay Biryani Masala Mix: 1 packet / 60g, mixed in 1/2 cup water

Steps For Cooking

  1. Heat oil and saute onions till they turn golden. Add tomatoes and cook until they are mushy.
  2. Add chicken/meat on bones, ginger and garlic paste, yoghurt, potatoes and Malhar Special Bombay Biryani Masala Mix.
  3. Pour in water (4 cups for beef or lamb, 2 cups for chicken). Cover and boil until the meat is fully cooked. Then, increase the heat and cook until the oil separates.
  4. Boil 3 L/15 cups of water in another pot. Add salt and the soaked rice. Cook the rice till it’s 3/4 th done. Strain the rice.
  5. Layer half the rice in a pot, pour meat curry over it, and top with remaining rice. Cover with the lid and cook on the low flame until the rice is fully cooked (10 minutes). Serve hot.

Note: Use breast, rib, or shoulder cuts of meat.
