- Fry the onion in hot oil until golden. Crush half of the fried onion and keep the rest for garnishing at the end.
- Add meat, garlic paste, ginger paste, crushed onion, yoghurt, potatoes, and Malhar Kolkata’s Nawabi Biryani Masala Mix. Stir-fry for 10 minutes. Add water (Beef/Lamb-2 cups, Chicken – 1 cup). Cover and cook on low heat until the meat is 95% tender.
- Separate the meat pieces, sieve the gravy, and discard the sieved items.
- From the gravy, separate 3 tablespoons of oil and keep it for topping.
- In a separate pot: In 15 cups (3 litres) of boiling water, stir in 3 tablespoons of salt and the soaked rice. Boil rice until ¼ cooked. Remove and drain thoroughly.
- Spread half the rice in a pot and layer with meat. Top with the remaining rice. Now pour the gravy, circling it over the rice. Cover the pot and cook on low heat until the rice is fully cooked. Mix before serving.
Tip: For meat, use breast, ribs, and lamb shoulder cuts.
